The movie Seven Pounds...WOW

We watched it last night...oh my goodness what a wonderful movie..
Will Smith is one of my favorite actors...he is amazing.
Everyone should see this movie....I can't say much because, a lot of the movie
you're not quite sure what is going on, even though your mind is racing
to what is about...expect to be quite moved in this one..
Just a wonderful movie..I highly recommend it...even for kids.
we didn't let Jon see it yet, as it is rated PG-13 but I would let him see it now,
even though he would probably get bored with some of it...just an amazing movie.

Happy EARTH DAY....

Hey again and a Happy Earth Day to you all
go out and hug a tree lol really...put your back up against it..spine to bark
and feel the energy within that tree...they are quite alive..
and love giving us oxygen and beautiful art from nature...as well as
incredible shade...on those hot summer days.
I have several tree in the circle part of my circle drive..as my front
door is about 85 ft from the street..and when all the trees are in full bloom,
I feel like my home is back in the woods...just so cool.
I truly love trees..and when we bought this property...I wanted to be sure
they didn't cut down many trees..only what was necessary to get our home in place.
Our backyard would be a Home and Garden TV...challenge...it takes a lot of time
and money to get landscaping done really well..but we're working on it,
the last couple of years we didn't do much in the back..of our .66 acre property, but
we will this year...including rebuilding most of our back deck.
all in time...patience Stef....lol
This is also a wonderful day to plant something wonderful in your garden
or yard..I will be planting at least 2 little bushes in front of my home...and even
though I am on vacation day 3 of 6 ...I have been very busy around my home
and doing errands..wow..I would def be busy all day if I didn't have to work,
and would love every minute of it...maybe one day heh...
Today will be for the earth stuff...weeding and planting..just playing in the dirt..
if you will...we are buying a new push mower with power driven wheels that
will help get us through...we seem to not have good luck with lawn mowers..
but this will change....the energy for that is changing NOW..lol

Adding a little ooompa...to those pancakes..

Hey and good morning
oh what a gorgeous morning it is ..
wow..I just love Carolina blue skys so pretty.
I hope the wind is gone today..
well the John Deere needs the motor rebuilt.. I know..have no idea what happened
but that will be about $400..hey it's just money lol
so we will be pushing the lawn for a while.
but good exercise right!!
Ok to add a little ooompa to your pancakes..(which by the way I use HungryJack
just add water, delicious) you know those little pouches of muffins mixes...
banana nut...chocolate...bran ..berry...etc...well when you pour your pancake mix
into the bowl and I never measure...but I have a great wisk..$12..Pampered Chef..
but I add about a half of a pouch of any flavor (love the banana nut) of the muffin
mix right into the pancake mix, wisk that together really good.
and then add my water...I add a little bit of water, to get everything wet..
then start wisking..then add some more and wisk a lot...then I add more water
and wisk until the right consistancy for pancake mix..
then just cook up those pancakes...will be delicous..sometimes I dont' even use
syrup..just a little butter.
I have made many mickey mouse pancakes too..and minnie mouse lol

We are loving being Grandparents..

Oh I had a MOST wonderful weekend with my grandbabies...
had Lilly most of the weekend she was sooo precious...got to see Aiden
too he is so precious as well..took them both to the big mall sat night..in
their new double stroller..heehee..Lilly was in the front...then Aiden was mess
with her, like brothers can lol..hair n all..so we switched them and the was
perfect...and Aiden was the leader with his arms stretched wide open like he
was on the front of the Titanic sooo cute...I got them their own stroller
cell phones...little mirrors..makes noises.. n all lol
This morning as I am on VACATION for 6 days..
we got to babysit Aiden for a few hours...he was such a baby doll
We are loving being Grandparents for sure..

Lime Chip Nachos...yum yum from Stef's Kitchen

Lime Chip Nachos

1 large bage of Tostitos hint of lime
Tortilla chips...oh are they yummy
(you don't have to use the lime ones
if you dislike lime..but)
1 tub of Sour Cream
Great Value Fiesta grated cheese
(I'll plug Walmart, but it is a wonderful cheese blend)
1 bunch of Cilantro
1 jar of your favorite Green Salsa
I use Herdez Salsa Verde.
(yup Walmart too lol)
cook up some ground turkey
pre-season it with a taco seasoning
of your choice...(press into the raw
meat like you would a meatloaf, when almost cooked
add on can of old el Paso or?? Red enchilada sauce..
let meat cook first though...this meat is great for these nachos or tacos)
cook your meat from beginning with small small diced onions
and green peppers..chop meat as it cooks..small pieces.
When all prepped..
get out a cookie sheet..place the large
lime chips on the cookie sheet
put on your amount of the cheese blend..
then add some prepared meat
as much or little as you want
(also great with no meat, just cheese)
this prep makes the difference on how they turn out..
place your cheese n meat..evenly..
then place under your broiler until
it's melted the way you like.
( I like the cheese bubbling and the edges of the chips browned a bit.
whole different taste, but this is your preference)
then place on a plate with a little bowl..of sour cream and a little spoon....(the plastic baby spoons work perfect for this..on each serving, also if you see the little sauce bowls..like 1-2 ounce ones..grab them..they are great for individual servings of sauces)
in another little bowl pour in your Green Verde Salsa..
with it's own little spoon too...put all on their plate
and serve with a side of chopped cilantro......yum yum
they can grab a chip put on some sour cream
some salsa a pinch of cilantro and whalaaa yummy
(I like each person to have their own
dips n salsas on their plates.
Great with your favorite lime beer
or margarita or iced tea or lemonade
all good.
can be served as an appetizer with like oh 5-6 chips on
each plate with sauces..or more as a full meal
with a bowl of shredded lettuce and a bowl of cheese
and of course some red salsa..and last
but not least serve with chopped Cilantro..always!!

My Front Yard

Hey...
I hope to get my front yard done this spring..with a new porch ...a new dog run.. and
a new flower bed area.
Ideally I want a wrap around 2/3 of my house porch too...
but for now just a new front porch, dog run, and flower area..
I will post my progress with pics soon ...doing this will keep me going with it LOL
and yes I am doing it..concrete n all..

Stef's BBQ Smoky Hot Wings...yum yum

Hey y'all
this is a quick recipe for the best wings around..and hey you can make them...
easy from scratch...this sauce can also be used on full chicken pieces.
but cook the chicken fully, first.
2 bags of frozen wings
(for 4-5 people 1 bag
but they will eat these up)
Lemon Pepper
2 sticks real butter -salted
big bottle of ketchup 440z.
white vinegar
®Texas Pete hot sauce
Liquid smoke
2-3 tsps of brown sugar
ok thaw the wings, rinse then sprinkle with lemon pepper-all over...bake at 350
for about 45 mins or less but they must be cooked thoroughly. while they
are cooking, and you actually can do this way earlier, even the day before...
in a large sauce pan, put in about 44oz of ketchup...1-2 cups, maybe more of
white vinegar, enough to wisk this somewhat thinner than the ketchup, (for as
this cooks it will thicken), then add 2 sticks of butter, let them melt-wisk in, then
2-3 tsps of liquid smoke, then add your brown sugar.
If you want to make some that has no heat at all
take some of this mixture and put it aside in another pan, before you add
any Texas Pete..we usually add about 2 tsps or to your own heat
tastes....now let this cook and thicken to the thickness of a rich
BBQ sauce...as I said it can be done earlier in the day or the day before.
Now for the best taste...have your BBQ grill ready at this point, you can also
do the rest in the oven, but the grill gives them that awesome taste.. you
take the wings and you get your tongs and you dip each fully cooked wing
in the thickened sauce and then place either on the grill (on a foil throw away
tray with holes, less grill cleanup) or back on a cookie sheet, and into the
oven...let cook in oven for about 15 mins...on the grill you turn them and
can brush on more sauce if you wish..grilling on both sides..then
put them on a plate and serve the right up..with extra sauce on the side
they go great with your favorite side dishes...like potato salad or
brocolli salad, with sliced avocado, pasta salad...grilled corn on the cob
grilled right in it's husks or in foil with butter n a little salt n pepper

hey and happy April fools day..

I hope you all have had a wonderful day
been rainy here again in mid NC...but I guess we need it
saw my grandbabies tonight Lilly is about walking...she is dancing on the floor..
but the walkin is just about right there..and Aiden is huggin huggin n kissin lolol
so does Lilly..she pushes out her lips so cute n funny..
Dale has been going through THE ROOM...the storage room off our bedroom and wow
there is treasure in there..and new shoes too lol
one more day this week...Thursday are my Fridays.. lol whoo hooo
I will be sharing this weekend 2 great recipes with you..one is my famous
Stef Salsa..I could sell it lol
and one is my famous wing sauce...I could sell that too lol.
